Content is the whole job
Assetto Corsa hosting is mostly content management. Every car and track on the server has to exist on every client, in the same version, or drivers get kicked at the join screen. That is why an AC server is more work than its resource usage suggests: the machine is idle, the content list is not.
Sessions, not just slots
An AC server runs a session cycle: practice, qualifying, race, then back around. Getting the timings, grid rules and pickup mode right is what separates a server people use from one they join once. The config for that is in the panel rather than in a text file you edit over FTP.
Why the game's age is not a problem
Assetto Corsa shipped in 2014 and Kunos has long since moved on to newer titles, so the Steam news feed is quiet. The game is not: it still holds thousands of concurrent players, and it remains the default platform for online sim racing because of the modding scene around it. Feature-complete is not the same as abandoned, and for a server product it is arguably better: nothing breaks your content list on patch day.

Can I run mod tracks and cars?
That is the main reason to have a server. You upload the content and every driver installs the matching version.
